A hearty and delicious Turkey Meatloaf Dinner that's easy to prepare and perfect for weeknight meals. This dish blends ground turkey with fresh herbs and spices, served alongside seasoned roasted vegetables for a comforting meal.

Ingredients
1 pound ground turkey
1/2 cup breadcrumbs
1/4 cup milk
1 small onion, finely chopped
2 cloves garlic, minced
1 large egg
2 tablespoons ketchup
1 tablespoon Worcestershire sauce
1 tablespoon fresh parsley, chopped
1 teaspoon dried oregano
Salt and pepper, to taste
2 cups mixed vegetables (such as carrots, potatoes, and green beans)
2 tablespoons olive oil
1 tablespoon lemon juice
1/4 cup green onions, chopped for garnish

Preheat your oven to 350°F (175°C).

In a large bowl, combine the ground turkey, breadcrumbs, milk, chopped onion, minced garlic, egg, ketchup, Worcestershire sauce, parsley, oregano, and season with salt and pepper. Mix until just combined.

Form the mixture into a loaf shape and place it in the center of a baking dish.

In another bowl, toss the mixed vegetables with olive oil, lemon juice, and season with salt and pepper. Spread the vegetables around the meatloaf in the baking dish.

Bake the turkey meatloaf and vegetables in the preheated oven for 1 hour, or until the internal temperature of the meatloaf reaches 165°F (74°C).

Once cooked, allow the meatloaf to rest for 5-10 minutes before slicing. Garnish with chopped green onions before serving.
