    Heat oven to 180°C and line three small equal pans. Whip eggs with sugar until very thick, fold in flour and salt, then divide in three. Leave one plain, fold cocoa into one and ground walnuts into the third. Bake 12–15 minutes and cool.

    For syrup, boil water, sugar and citrus zest for 5 minutes. Cool and add 80 ml rum. Soak raisins in 20 ml rum.

    For vanilla cream, heat milk and vanilla. Whisk yolks, sugar and cornflour, temper with milk and cook until thick. Cover the surface and cool.

    Place plain sponge in a deep dish, brush generously with syrup, spread with vanilla cream, raisins, walnuts and a little jam. Repeat with cocoa and walnut sponges, distributing all components evenly.

    For sauce, simmer chocolate, cocoa, 120 ml water and remaining 20 ml rum until glossy. Whip cream without much sugar.
