Tuscan White Bean Soup

Ingredients
2 cups canned white beans, rinsed and drained
1 medium onion, diced
2 garlic cloves, minced
2 carrots, chopped
2 celery stalks, chopped
4 cups vegetable broth
1 can (14 ounces) diced tomatoes, undrained
1 teaspoon dried thyme
1 teaspoon dried rosemary
2 cups kale, chopped
1 tablespoon olive oil
Juice of 1 lemon
Salt, to taste
Pepper, to taste
Fresh parsley, chopped, for garnish
Green onions, sliced, for garnish

In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery, stirring occasionally until the vegetables are tender, about 5-7 minutes.

Stir in the minced garlic, cooking for an additional 1 minute until fragrant.

Add the rinsed white beans, diced tomatoes (with their juice), vegetable broth, dried thyme, and rosemary. Bring the mixture to a boil, then reduce heat and simmer for 20 minutes.

In the last 5 minutes of cooking, stir in the chopped kale and allow it to wilt.

Remove the pot from heat and stir in the lemon juice. Taste the soup and season with salt and pepper as desired.

Serve the soup hot, garnished with freshly chopped parsley and sliced green onions.
