Turkish Menemen
Menemen is a classic Turkish breakfast dish made with eggs, tomatoes, bell peppers, and spices, cooked in a skillet for a delicious and hearty meal.

Heat 2 tablespoons of olive oil in a medium skillet over medium heat.
Add the finely chopped onion to the skillet and sauté until translucent, about 3-4 minutes.
Stir in the chopped green bell pepper and cook for an additional 3 minutes until softened.
Add the diced tomatoes to the skillet and season with salt and black pepper. Stir in the red pepper flakes and cook until the tomatoes break down and create a sauce, about 5-7 minutes.
Make small wells in the tomato mixture and crack the eggs into each well. Cook until the egg whites are set but the yolks remain runny, about 4-5 minutes.
Sprinkle the chopped parsley over the top for garnish, along with sliced green onions.
