French Lentil Salad

This French Lentil Salad is a hearty and nutritious dish, perfect for a light lunch or as a side for dinner. Packed with flavors from fresh vegetables and herbs, it's easy to prepare and can be enjoyed warm or cold.

Ingredients
1 cup green lentils
2 cups vegetable broth
1 medium carrot, diced
1 celery stalk, diced
1 small onion, finely chopped
1/4 cup fresh parsley, chopped
1/4 cup green onions, sliced
1 clove garlic, minced
1/4 cup olive oil
2 tablespoons red wine vinegar
Juice of 1 lemon
Salt
Pepper

Rinse the green lentils under cold water and then place them in a saucepan with the vegetable broth. Bring it to a boil, then reduce to a simmer, covering the pot.
